Citrus Chicken

 

Makes six servings.

 

Ingredients

 

l Cup Florida Orange Juice

2 Teaspoons Granted Orange Rind

1 Small Onion, Grated

3 Teaspoons Salt

1 Teaspoon Deli Mustard

1/2 Teaspoon Hot Pepper Sauce

1 3-Pound Chicken, Cut in Serving Pieces

3/4 Cup Flour

1 Teaspoon Paprika

1/2 Cup Vegetable Oil

Dash of Pepper

 

Directions

 

In large bowl of baking dish mix orange juice, rind, onion, salt, mustard,

hot pepper sauce and pepper. Add chicken. Cover and marinate in refrigerator 2 hours.

In pie plate mix flour and paprika. In large skillet heat oil to 350 degrees.

Remove chicken from marinade, reserving marinade for gravy.

Dip chicken in flour mixture; add to hot oil in skillet.

Cook over medium heat 15 minutes, turn and cook an additional 15 to 20 minutes

or until chicken is tender. Drain on paper towels.

In medium saucepan mix 2 tablespoons flour-paprika mixture

with 2 tablespoons hot oil from skillet. Stir in reserved orange juice marinade.

Cook, stirring often, until mixture comes to a boil; simmer 5 to 10 minutes. Serve over chicken.
