Indian River Orange Pie

 

Ingredients

 

1/2 Cup of Sugar

1/4 Cup Starch

1 3/4 Cup Orange Juice

3 Egg Yolks Beaten

1 Cup Flour (for pastry)

1/2 Teaspoon Salt (for pastry)

2 Tablespoons Cold Milk

1/4 Cup Oil

3 Egg Whites (for meringue)

1/3 Cup Sugar (for meringue)

 

Directions

 

For pie crust, mix flour and salt. Put milk into oil, but do not stir.

Add to flour mixture. Stir and rollout for crust.

 

Mix Sugar, Corn Starch, and Orange Juice together until smooth.

Add egg yolks and bring to a boil over medium heat.

Cook approximately 1 minute while stirring constantly.

Remove from heat. Pour into prepared pie crust (cookie, graham, or pastry).

Top with meringue sealing edges to crust and bake 350 degrees for 15 minutes.

 

For meringue, beat together egg whites and sugar till stiff peaks form.

Spread over pie filling and serve.

 

Note: For a low fat option, replace the oil with applesauce.
